Why Kitchen Fires Are Different

Cooking oil fires (Class F / Class K fires) are unlike other fires. When a fryer overheats and ignites, the burning oil is at over 340°C — far above the auto-ignition temperature. Applying water causes a violent steam explosion. Standard dry powder leaves a thick residue that contaminates food and is almost impossible to clean from kitchen equipment. A Class K wet chemical suppression system is the only type specifically designed for this scenario.

How Automatic Kitchen Suppression Works

  1. Fusible links (or UV/IR detectors in advanced systems) detect abnormal heat in the cooking zone or exhaust hood.
  2. The system triggers automatically — cutting off gas supply to all cooking appliances via a mechanical gas shut-off valve.
  3. Wet chemical agent (potassium-based solution) is discharged through nozzles aimed directly at each appliance.
  4. The agent reacts with the hot oil via saponification — forming a foam blanket that seals the oil surface and prevents re-ignition.
  5. Simultaneously, the hood exhaust fan is shut down to prevent the spread of smoke.
  6. The alarm panel notifies building fire alarm system and the local fire brigade.

The global market leader in kitchen suppression. Uses ANSULEX Low pH Liquid Fire Suppressant. Approved under UL 300 and NFPA 17A. Suitable for cloud kitchens, dhabas, and small restaurant operators. Ensure the system is UL 300 or IS 15684 certified before purchase.

Installation Requirements Under NBCS 2026

  • System must cover all cooking appliances generating grease-laden vapours.
  • Gas fuel shut-off must be integrated and tested as part of system commissioning.
  • Manual pull station must be mounted near the kitchen exit (not inside the cooking zone).
  • System must be inspected and recharged every 6 months (not annually — commercial kitchens are high-use environments).
  • Exhaust hood, plenum, ductwork, and filters must be cleaned of grease accumulation quarterly — a dirty hood is the most common cause of kitchen fire suppression system failure.

The Gas Shut-Off Valve — Critical and Often Ignored

The gas shut-off valve must cut off gas supply to all appliances within 2 seconds of system actuation. This is non-negotiable — without it, a fire can re-ignite immediately after the suppressant is discharged. The valve must be tested as part of every 6-monthly service. Ensure the valve is installed by a certified gas pipe fitter and approved by the local LPG distributor.
